Top chef moves to Graigfechan pub The Three Pigeons

A TOP chef who cooked for celebrities including some of Britain’s best-known comics is now sharing his skills in a Clwyd eatery.

Paul Barnes, originally from Bristol, took up the post of Head Chef at Graigfechan pub The Three Pigeons, and says he is delighted to be working at his base in the Vale of Clwyd.

“Just look at it. What a fantastic place to live,” he said after moving into his new home in Llanfair DC last month.

“Certainly there’s no problem with the produce around here. We try to source everything locally if we can and it’s astoundingly good. If you look out the window you can even see the fields where our organic potatoes are growing.”

Barnes, who previously worked for a number of upmarket restaurants in Bristol, where he cooked for celebrities including Little Britain stars Matt Lucas and David Walliams, TV presenter Kate Humble and illusionist Derren Brown.

“When I worked at a restaurant in Bristol, Derren Brown used to come in and do tricks for the diners. It was great when I saw him on television and realised who was the magician who used to come to the restaurant every week,” he added.

The 28-year-old was recommended to staff at the Three Pigeons Inn by Welsh TV chef Dai Davies and was taken on as a member of staff by landlord Jim Short.
